Whether you’re vegetarian or not, this Ultimate Veggie Sandwich is so packed with flavor you won’t even miss the meat! From the onion & chive shmear to the sprouts and crunchy seeds + all the veggies in between you’re going to want this for lunch daily!
I love a good sandwich. But what makes a sandwich? The bread! The hubs and I are pretty particular about our bread. We’ve got to be able to recognize and pronounce the ingredients. About a year or so ago we stumbled upon Dave’s Killer Bread in our Costco.
I know what you’re thinking.. why would two people need so much bread? Well, we keep a loaf in the fridge and freeze the other one! Works perfect and we end up going through both loaves before our next Coscto trip (where we stock up again).
When I was asked if I’d be interested in trying the two newest DKB products in the amazing line of bread, I couldn’t jump fast enough at the opportunity. Not only are they delicious, but they are organic AND Non-GMO Project verified!!! I couldn’t wait to tear into the loaves as soon as I got them and this sandwich was the perfect way to get the party started.

How to Make The Ultimate Veggie Sandwich (step-by-step)
1. Gather your chive & onion spread ingredients. You’ll need cream cheese, Greek yogurt, green onions, fresh chives, onion powder and garlic powder.
2. Chop the green onions and fresh chives. In a small bowl mix together all of the ingredients for your onion and chive spread.
3. Reserve until needed.
4. Gather your sandwich ingredients. You’ll need whole wheat bread, spinach, pepper jack cheese, Swiss cheese, avocado, cucumber, a Roma tomato, alfalfa sprouts and sunflower seeds.
5.Lightly toast bread.
6.Once cooled, on one slice spread a thin layer of chive & onion spread.
7.Top with spinach,
8. Cheese
9. Mashed avocado
10.Cucumber
11. Tomatoes
12. Sprouts
13.Sprinkle on the sunflower seeds.
14.Spread thin later of chive & onion spread on another slice of bread
15. Top your sandwich.
16. Enjoy!

You’ll want to be sure to seek out breads that are made with whole wheat as the first ingredient (wheat flour and enriched wheat flour are not whole wheat!). You’ll also want to avoid any breads containing high fructose corn syrup, as well as any ingredients that are man made and hard to pronounce.

Instead of making your chive & onion spread from scratch, you can purchase a whipped chive cream cheese spread at your local grocery store, near the cream cheese.You can also save some time by slicing your avocado onto your sandwich, rather than mashing it.
- Can I make this sandwich ahead of time? Because this sandwich is filled with fresh produce, you probably won’t want to make it more than a day ahead of time.
- What’s the best way to prepare my mashed avocado? For maximum flavor, you’ll want to mix the avocado with 1 tsp of fresh lemon juice and salt to taste. The lemon juice will help prevent the avocado from browning as quickly.
- I don’t have spinach, what can I use instead?Romaine lettuce, baby chard, or baby kale leaves would also work great!

Ingredients
- 4slicesDave's Killer Bread Organic Seeded Honey Wheat
- 1/2c.spinach
- 2slicespepper jack cheese
- 2slicesSwiss cheese
- 4tbsp.mashed avocadomixed w/1 tsp. fresh lemon juice & salt to taste
- 1/2cucumberthinly sliced
- 1Roma tomatothinly sliced
- 1c.alfalfa sprouts
- 1tbsp.sunflower seeds
Chive & Onion Spread
- 2oz.cream cheesesoftened
- 3tbsp.non-fat plain Greek yogurt
- 2green onionschopped
- 1tbsp.fresh chiveschopped
- 1/8tsp.onion powder
- 1/8tsp.garlic powder
Instructions
Chive and Onion Spread
In a small bowl mix together all of the ingredients for your chive and onion spread.
Reserve until needed.
Sandwich
Lightly toast bread. Once cooled, on one slice spread a thin layer of chive & onion spread.
Top with spinach, cheese, mashed avocado (plus 1 tsp fresh lemon juice & salt to taste), cucumber, tomatoes, and sprouts.
Sprinkle on the sunflower seeds. Spread thin later of chive & onion spread on another slice of bread and top your sandwich. Enjoy!

Served with a nice bowl of tomato soup, for a meatless meal. Delicious and a definite keeper. Followed recipe exactly, perfection!

The sprouts are an important part of this recipe since they add such a light & refreshing crunch to the sandwich, but you could always add some extra cucumber to try and make up for the lack of sprouts. Another option would be to try growing your own sprouts at home! It’s surprisingly easy to do! If you search Amazon for sprouting trays (I prefer the round trays that are 6″ in diameter) and alfalfa sprouting seeds (the most common type of sprout) you should get some good results. Hope that helps!

December 21, 2019 at 12:34 pmHi Suzanne! Great question. I find that the chive and onion spread keeps well for about a week in the fridge! It should also store great in the freezer for up to 3 months, and should thaw out in about 24 hours once you transfer it from the freezer to the fridge.

I had to do two things slightly differently but the gist is there: I left off the sunflower seeds. As far as the Chive and Onion spread, I cheated and bought the ready-made stuff that is a whipped chive cream cheese spread. I did not have Dave’s bread at the time but I still enjoyed the sandwich. I have since found a place that carries the bread and I will be stopping there tomorrow to pick up a loaf or two.
